Studdering acceleration

Hello I drive a 2018 Chevy 2500 with a 6.0 engine and the problem started yesterday me personally I think it could be watery fuel but on acceleration I press on the throttle the engine runs very smoothly but then all the sudden it feels like there's something holding it back like I'm towing a really heavy trailer or something but you can actually feel the jerking could that be because maybe watery fuel got put in there or am I looking at something maybe more
