I have a 2016 GMC Sierra Denali. I've been having this issue where the temperature gauge goes down which causes the fans to turn on. The truck is not overheating but I am wondering if anyone has seen this issue, possibly a faulty sensor or something. Appreciate the help.

I’d second that, if not that, wiring to check next. Be sure you have good battery voltage first though.

I had this issue with my 2014 5.3l WT.  My thermostat failed and stuck open (not like the old days).  If the engine does not reach a predetermined temp in a set time after start up, the fans will kick on high as a safety.  New thermostat fixed the problem.  Also a faulty temp sensor that sits right next to the thermostat can cause this issue.
