So I have an 18 sierra 5.3 L v8 Gasoline engine and this just recently started happening but when I hit full throttle when it gets like 4,000 rpm’s and higher it like starts to bog/stutter would anyone know what it could be or some way to figure out what is happening

With a scan tool and the truck in front on me, I'd only be guessing.

 

Could be misfires, could be a fueling issue. Tough to say really. If the check engine light is flashing during this, then you know it's a misfire.

@CamGTPso every time it’s happened I haven’t noticed it come on and I do get a check engine light for evap system the code is p0455 or something like that, but would that effect it in anyway?

Try turning off the traction control and if it still does it, then check the exhaust, cat's, Flapper valve (behind the muffler, it's for controlling AFM/DOD "drone" and adds back pressure to exhaust). Since it's direct injected (injectors fire into the cylinder, not the intake), could be a fuel starvation problem (borderline Hi pressure fuel pump), as long as the air filter is good.  Just a couple of ideas!
