Many engine degreasers will cause hazyness on painted parts, so you might want to try Simple Green. It is a very effective degreaser, especially in concentrate form and it won't harm paint that has set.

I have used EverGreen with great results. A little TLC with some Armorall after and it looks great! I had by 5.7 "professionally" detailed and a few days later lost an alternator. I was told that it could have been the cleaning solution that the detailers used? I don't know for sure but I'll stick to doing it myself from now on!

What might work good in the engine compartment for getting off caked on mud and water spots? I gave everything a once over and all the chunks are off so all that is left is just spots. Thanks!

I have to agree simple green has to be one of the best degreasers I have ever used  I've used it for pretty much everything from paint prep to counter top clean up. doesn't smell to bad either :D I used it on my quad too so ya know it takes off the nasty goo too :D
