You will likely lose quite a bit of low rpm torque and gain high rpm power. If you race 1/4 mile regularly it may help. Around town it will feel sluggish. I'm assuming you are running a 5.3. The like some backpressure to keep low end torque.

It would be just fine. I have run straight pipes on all my trucks with no problems. On my 06 I started out with the x-pipe but the drone inside the cab was really bad. I took it off and went to straights and have had 0 problems. I still get about 17.5 city and 20 plus mpg on the highway.

Ya I would be leaving the cats on, and I have the 4.8

So it wouldn't be 'horribly' loud and you'd still be legal from an emissions standpoint.

What about performance wise, With the cats still there would there be enough back pressure for my low end TQ? Or do you think I would need the mufflers?

you will be fine. i have run with and without the x-pipe and its fine. if you are really worried just go with a y pipe and then run the pipes.

Modern cats are fairly free flowing, that why I laugh when I here folks talk about removing the cats on their new vehicle to 'gain' performance..... they just don't understand.
