Catalytic Convertor replacement on 4.8/5.3/6.0L

Has anyone changed the catalytic convertors on the 4.8/5.3/6.0L? (legally, over 50K miles or clogged)  It looks like it would be fairly straight forward with say a Random Technolgies bolted right up to stock manifolds (or good time to put in ceramic headers) and have the rest of the down pipes fabricated to either true duals with xover into dual 2.5"-3" or 3"-3.5" single back.

 

I know these days the cats are hardly a significant blockage and take a lot longer to clog up, but you never know when you might loose a sensor and start running in "limp" mode and you are way back on the trails that no tow truck will come and get you out and you burn the cats out.
