Wheel install from hell. Help!!

So I've got myself into a fine mess. I have an 02 Silverado 1500 4x4 on OEM 16 wheels/265s. It was time for tires, so I decided to go bigger. I purchased 285/75/16 treadwright guarddogs along with 16 inch Cragar v5 wheels (in the right bolt pattern). When I took the truck to the shop for tire/wheel install plus leveling kit, it turned out that the centercaps for the wheels were too small, and one of the tires arrived with a hole in it. 2 weeks later, I finally got a replacement tire and the right center caps. After mounting and balancing the new tires on the new wheels, we went to put them on....and....THEY DONT FIT. The offset is wrong, and the inside of the wheel is rubbing on the front brake pads. It doesn't look like 1/2 inch spacers will be enough, and I'm not running 2 inch spacers for a variety of reasons. So now, I have to yank the cragar wheels out of my tires and send them back to Summit, and I'm back to square 1. I want black steel wheels for the truck. Anybody know what the exact offset is? I don't want to order the wrong sized wheels again. Any advice/help would be greatly appreciated.

-Thanks
