Does anyone have any experience with weigh-safe hitches?

I have one (8" drop). I like it a lot, it works very well. It is so handy when hauling cars or something to simply be able to creep the car forward until you hit your target tongue weight. No more guessing. Even with trailers where you use a WDH, you can use this to load the trailer in your driveway and then swap to the WDH which is much more convenient than driving to scales multiple times.

Another reason I got mine is simply how beefy they are. When you get to 6-8" of drop (or more) with aluminum ball mounts, many tend to flex a lot. The Weigh-Safe design is much more solid than many of those which gives peace of mind.
