Bilstein 5100s and 18x10 rims -25 offset

I have another thread about 4.5" lift and another about tires. But I am thinking about going a different route. I was all set to drop the money on a zone lift but some things have changed so that's not in the budget right now. 

2015 Silverado 4x4 double cab standard bed 

So this is where I need advice and help. I have decided to just level the truck with bilstein 5100s set at the 1.8 mark. I want to keep some rake so I may end up doing a small block lift in the rear from proryde or something if it looks nose high. 

This is my question. I am set on 18x10 -25 offset rims cause I want a wider stance. I've heard people have got 35s with the bilsteins and have no rubbing on stock rims. So with these rims what size tire can I run without doing too much trimming? I'm ok with some plastic trimming or zip tieing it back like some have. I'm set on Falken AT3W tires. I want 33s. I'm thinking 305x65x18 (33.6x12) or 285x65x18 (32.6x11.2).

 

Thoughts? I looked on customwheeloffset.com and saw some running the 285s on a level with no to minimal trimming but didnt see anyone on 305s. 

Anyone have wider rims and a level?

So I just came across this set up... 35x12.5 tires on 18x10 rims -12 offset ok only a one inch level. I actually really ike this look. I also know I could get at least two inches from the bilstein 5100s. This also gives me a slightly wider stance and will make the truck sit higher. What are your guys thoughts? I only have the 4.3l so I worry about 35s a little but thinking this could be a really good option for me instead of a full on lift kit.

If you draw a line from the bottom of the front bumper across the side of the truck, you will see the bottom of my bumper is just above the hub centerline of the wheel.  The blue truck is a few inches above the hub center.
