I have a 2015 silverado ltz and the center of the touch screen does not work and the audio balancing is set to play sound out of the right side speakers only and I can't fix that because the touch screen doesn't work in the area the arrows are is there a way to reset those settings

I had a head unit fail, and it had to be replaced.

I have read here that a battery disconnect for an amount of time may fix it. Someone may chime in on more details for that.

Some have reported a bad HDMI cable that may cause this.

Unfortunately, a failed touch screen smells to me like a head unit failure and may require replacement (sorry).

That said, I am in no way an AV God, or expert.

Pull the #18 fuse in the passenger side fuse box, start the truck, turn off, open drivers door, then reinstall fuse and see if that helps.

Give the screen a really good cleaning, get all the dirt and the fingerprints off of it. The oil build up from your fingers cause "ghost touches", then everything starts doing its own thing. It worked for mine, no problems for over 4 months since I cleaned the screen.
