What’s causing this muffler sound

That is what I would call rasp.

 

Removing the two cats is like removing two very very good resonators. Those resonators are what soak up all that rasp and now that you removed them for some long tubes you are hearing everything.

 

Install another resonator before the muffler or add cats (maybe a single large highflow cat) back into the exhaust and it will tame it back down.
