So a scary thing happened today, luckily it happened while I was backing in to a parking spot and not doing 90 on the freeway (like I was 10 minutes earlier).

The wheel jerked out of my hands and the whole dash blinked off for a split second, then it did it again and again... So I turned it a few more times on video, link below.  I have a appt with the dealer for next week but this thing has me worried it will do it at highway speeds.  Does anyone know where or how to disable that servo so it doesn't steer me into on coming traffic...

Nothing to disable as that's the truck losing either ground or B+.  The loss of power means the electronic steering assist motor is losing it as well.  That snap is the truck losing assist.  You've either got a grounding issue, or the battery cables are junk.

Ok so its the load against the assist that is being put to the wheel when the power drops...  Any idea why it happens while turning or is just now becoming a problem?

Also note: I've had the ghost radio for over a year now... but I checked all the culprits from that one mainly the ground by at the dash speaker

To follow up on what @newdude, these trucks are known for having negative terminal cables going back. Check it to make sure that it is not damaged in anyway. If it is, replace it.

Another ground you can check out is in the passenger front splash shield area. There is a ground there that can get dirty and cause the issues you are experiencing in your video. Clean it and make sure it is on tight. Hopefully that will take care of your issue.

Yep - know issues with these trucks.  Search the forums for "G218 ground" and "PIT5405" and you will find instructions on how to check grounds/battery cables/etc.
