Would a dual exhaust setup for the 6.0 make any difference performance wise, or am I best with a stock setup?  Sound wise, I could care less as I am already half deaf and wouldn't hear the damn thing with my hearing aids out.

It won't make any difference. The catalytic converters are what limits exhaust flow

And even on a stock 6.0, that engine doesn't have enough exhaust flow to outflow the cat converters anyway.

Thank you.  Next question-  How hard is it to replace the knock sensors on the 6.0?

I have 50 percent hearing loss in each ear. Mostly in the upper range. I hear exhaust sounds normally. Of course if you open the exhaust up you get increased power. They’d done a good job of exhaust flow even with quiet exhaust. So the power gain isn’t as much. I did see exhaust test on what would give the most gains. It turned out that one large exhaust pipe gave more horsepower than duals did on that test. The disclaimer was it could be different on another. In my case over the years growing up listening to my dad and uncle’s whenever they got a new vehicle. The first thing was always said she’d getting duals. Next thing you know you hear a rumble and my dad would grab my mother and say let’s go for a ride. My mother as funny as she was would say. Dad got hookers and headers. So it was part of the DNA back then. Faster? It seemed like it. The rubber patches weren’t any longer because that was part of the test. I’m sorry you can’t hear it. That’s really what matters with tuned exhaust.

Not very hard, just a little time consuming because you have to remove the intake manifold and do lots of cleaning once you remove it. You can watch video's on youtube for it.

 

I've done so many of them I can have the intake off in maybe 15-20min now. First time is going to take you way longer lol.
