I stopped to talk to a neighbor, put my truck in Park and exited the vehicle leaving it running because my dog was inside and I wanted the A/C to keep running. I was standing 20' away so it's not like I left it inside and walked away. My neighbor talked on and on but I could still hear the truck running. After 15 to 20 minutes (not exactly sure how much time went by) I walked back to the truck and it was not running. I didn't hear it shut off, but it had to have been within a minute or two ago as I know it was running during the majority of the long conversation as I was keeping an eye on it. Did my truck just randomly stop or is there some kind of feature that will turn off an idling engine after X minutes? Dog was fine, inside was still very cool.

The reprogramming is an option, the other method is set the parking brake and leave the transmission in neutral.  The automatic shut down happens only in park.
