Console upgrade: can I pull a harness out of a wrecked truck to make it work?

I know PG makes a plug and play harness to make a jump seat truck work with the full center console setup, but if I have access to a totalled truck, can I simply remove and reuse the part of the harness I need to make it all work using factory parts, or is it a harness that's integrated in the main harness and can't be separated?

Also, is the HMI worth an upgrade? (I can snag the HMI out of the donor truck, which is a 2019 High Country)

I'm not sure about all of the rest but I do know an HMI will need to be programmed to your VIN.
I recently bought a new HMI from WAMS (VIN required) since the one I had would pause after I turned off the ignition before a delay in continuing the current audio.
From the K2 to the T1, there are many changes to the wiring.
Isn't a 2019 High Country a T1?

You are correct on the 2019 HC, there were just a few trim levels on the carry over 2019 LD (K2) trucks.
