traded V6 for a 4.8 V8

Had an 03 Silverado with the 4.3 and 3.42 axle. The V6 torque peaked out around 2800 RPMs, and while it sometimes didn't keep up with traffic on the hills, it pulled my trailer quite well whether it had 1,000 lbs. or 5,000 lbs. on it.

 

Now have an 05 with 4.8 and 3.23 axle. Very surprised that this engine doesn't pull well unless it is revved up. I notice it's torque and HP peak out at about 4,000. I guess I am not used to spinning an engine this fast, especially with a light load.

 

I am considering getting a 3.73 ring and pinion set. My question is, will this much change from the 3.23 make a noticeable difference in towing without putting too much of a dent in my non towing MPG?

 

I guess towing in overdrive is out of the question, even in tow haul.
