Anyone know where I can get a White GMC grill Emblem? I've looked on eBay and nothing.

Paint or add vinyl

take it off, or tape it off. its not hard at all. get some krylon fusion if its plastic

Yep, I would take it off and paint it. White should be much easier, we did my dads and airbrushed it with matched paint and then cleared it.
