To be fair, you don't have to disable bluetooth, just forget the connection to your truck on your iPhone and it won't connect automatically - good thing to do if you're using Apple Car Play.
WiFi shouldn't affect any of the issues you've experienced.
And, yes, the Apple Watch will still connect even with bluetooth off as long as there is a WiFi connection it can fall back on - same WiFi as your iPhone - however, you will not have a watch connection without either bluetooth or a common WiFi connection.
