Everything under my 2006 silverado 5.3 is rusting away.  What could I swap the engine and drive train into relatively easy?

There are tons of late model trucks and cars that already have swap kits out there for them. Like Nova, Chevelle's, G-body's, caprice, monte carlo's etc etc, anything GM truck based all the way back to the 60's with C10's, silverado's. I bet there are some for older ford and dodge trucks, they have mustang swap kits.

 

Obviously you need some fab skills but many places offer engine mount kits and or new K-members for swapping in the LS drivetrain.

 

The easiest swap would be another truck like you have if the frame and body were good.

I was thinking some kind of monstrosity like a Suzuki samari.

Always thought the GM v8 to Nissian D21 was a good swap.  Ive seen it done with a 350 (5.7) dont know why it couldnt be done with a 5.3.
