I have a 2020 GMC Sierra 3500HD. Question is, why does the tailpipe taper down to 2.85" at the end? What is the benefit of that?

Cooling venturi.  Allows the cooling of the exhaust temps post tailpipe as to not burn things.  During regen, exhaust can get to 1200F.  The tailpipe design will drop 500-600F outlet temps.
