I was readying to do the differential service in the first few thousand miles of ownership. Maybe it's old-school superstition that differentials run hot while they break in and can shed a little bit of metal? Or is there still sense in doing an early change, and then regular changes thereafter?

Do it early. Yes, hot and shed most early.

I have used this gear lube in ATV, Side x Side and vehicles. 

The SXS was new and at 80 miles developed a front differential whine, changed to this gear lube and it has been quiet.
