Will 15 inch rims fit on my truck without hitting the brake calipers?

no, you need at least 16" rims on all of the new body style pickup trucks.

Yeah 16.5 is fine.  16" is the smallest you can go, but you can go higher (16.5, 17, etc) if you want.  Though 16 or 16.5 would be the best if your planning on doing a lot of off-roading.
