I was wondering if you guys think I should change the spark plugs for new ones if they look like this? The gap is ok, and i'm not sure how many miles they have on them.

Looks like you're running a copper plug. I'd change it, especially if this is new to you. They are very inexpensive

What's this on?

Go to youtube. There are plenty of video's on doing spark plugs for the 305/350 engines.

Change them.Clean your intake, throttle body and run a full tank of the highest octane gas available. This would do good to your engine.

New member here, not new to chevy though. Agree change them out and throw new wires on them too. Grab a distributor rotor and cap to keep in the glovebox with a spare serpentine belt. Just might get you out of a jam. I had a buddy break down one time from a worn out distributor cap and he had one rolling around in the backseat that I charged him to install on the side of the road. Peace!
