While driving, and when I am not pushing the gas the truck will sometimes just drop off and die (Sometimes its hard to tell that it actually died).  I have to put it in neutral and turn the key while the truck is still rolling to keep it going.  It does not idle rough and does not feel like something is wrong.  There are no codes that come up and no check engine light.  I changed all my plugs and wires thinking that was the issue since it was long over due...no luck. The idle seems to be at the right level (around 700 - 800 rpms).  I just ordered a new Idle air control valve and a throttle position sensor.  I'm looking for some suggestions here..

you will want to test the fuel pressure to see what you are working with.  I dont know much about the 4.3 but also check your map sensor and your throttle position sensor.  You can find videos on how to check, or replace if need be.

First thing comes to my mind is have the catalytic converter checked at some place you can trust....and not just sell you one because this is expensive.  I had a very similar thing happen once on a 4.3 engine and the engine just choked down and came to a stop.  I could start it and it would idle but after I got a little speed it would just do the same thing all over again.  If not that do as Sharpz said.  Or you might have the spark advance , timing, checked.

I know that the fuel pressure regulator has a very particular pressure to make and if it isn't right  (the computer monitors this) it won't run. It's also expensive. If you have a down stream oxy sensor and your cat is plugged I THINK that would show  a code but I don't know. I think you should check all three of these issues, also i think the idle air control would throw a code but I really don't remember any more.
