Real question is, who has done this themselves?

Specifically with the $500 set of Katzkin on Ebay...this is what I've been looking into.

I hear it's a grueling 10+ hours.

If you do the ebay kit it is pretty much same leather content as factory leather except you get a little bit of leather in the rear outboard seat inserts. I would at least go $200 more to get the rear seating surfaces in leather.

What cleaner/conditioner did you use on your katzkin to keep it looking new?

Tried several - Lexol - Leather CPR - U name it. I think the main thing is set a schedule and stick to it - I do all the car leather every 3 months. I do it around the 1st day of the 3rd, 6th, 9th and 12th months - same time I change the house HVAC air filter and change my sonic-care toothbrush head.

Vacuum the seams well - grit grinds away at the stitching. Then clean/condition with whatever you prefer. Right now I use Meguiar's leather cleaner/conditioner for the one step ease of use.
