I have a 2019 Silverado 1500 RST with a 2in level in the front. I'm wanting to buy 20x12 -44 offset wheels. Curious as to how big I can go with the tires before I really start causing some major rubbing. The stock mud flaps I would like to take off so is there anything else I'll have to do to prevent major rubbing?

Here, this should help you, local shops rarely know anything besides what fits stock unless you go to a custom 4 wheel drive shop.
