Just curious if you were able to resolve your  issue?

I just had the same this happen with my 2015 Silverado 5.3L. After a bit of research, I changed my coolant temp sensor and thermostat, and everything is working properly now. 😎

Had it checked out and the temp sensor was all that was bad.  However since I had 86,000 miles on original thermostat, I had that changed out also.  Truck is heating up faster, think thermostat may have also been opening too quick??  However the fan problem is a know problem for the sensor and I could have got by with just changing it.

Glad you got yours fixed!! I also changed my thermostat since I was already changing the temp sensor. Wasn't that difficult to do both.

Hopefully you used OEM thermostat and temp sensor. Certain things on these trucks can use aftermarket replacements but some really need OEM and thermostat is one of them. I replaced my thermostat last year with an aftermarket one (motorad). Worked great for several months but then began acting up and I began having overheating issues. It wasn't fully opening like it should have. I went back and replaced it with a lower temp OEM (194⁰) and no more problems. The first thermostat lasted for 7 years and I expect the OEM replacement will too.

Nope not an OEM, came from Autozone (Durlast 207 Degree).   I had some regret when I noticed it was plastic.  Guess we will see how it goes.  I know you are right, the OEM parts are just usually better, but even if I had done it myself I would have used after market- except I would have went to O'Reillys.
