I will be putting my winter rims and tires on this weekend. This morning going over 2 metal plates on a bridge that there repairing my truck fishtailed so bad I almost hit the car next to me and the center cement divider. It was bad.
I’ll be driving into work Monday and see how it feels

That's what caused the fishtail. Those plates are slicker than shit when they are wet.

There was a Dodge Ram directly behind me and had no problem
The problem is that every little bump it feels like the bed is loose and going out. Has to be the shocks
Not sure if I should bring to Chevy with winter or summer rims.

Should I just buy some bilstein 5100 and forget about the dealer? I feel they’ll never replace the shocks

My vote is yes, but others may disagree.

Best and final advice i can give would be follow your gut on what to do as far as new shocks and even Bilstein brand at that.

Eibach,  Pro Comp and even Rancho Rs7000MT are all monotubes that are available upgrades to the factory twin tube Rancho.

Just took both rear shocks out
They seem fine
1 had some greasy dirt under the boot but nothing crazy

Boot up or down? Writing looks like boot should be down...
I’m driving into work tomorrow so I’ll see how ride is affected.
