I would suggest a couple days, nights in Disney to do the theme parks, and stay close so you can go back, and eat, and rest. Magic kingdom does a parade, and fireworks show every night the kids would love. Then hop to a condo on the beach with a pool, for some relaxation. St Pete has a very nice beach with lots to do in the area. Siesta beach in Sarasota is one of the nicest in the country (where we live) and is about 1.5 hr from disney. The space center is a good day trip. The Florida aquarium in Tampa is fun also, for starters

The site I gave you ranks weeks based on several factors like weather, crowds, and the hotel pricing structure. I would also recommend a value resort for the convenience of transportation and cost, especially since the prices are so similar to places outside. If they offer free dining plans then that is the way to go, but otherwise there is almost no scenario I have been able to find where it is cheaper to buy the meal plan than to budget for meals and buy them while there. Especially true if you have kids that can eat off your plate or the kids menu.

I was conscripted into going to Disney World on my 50th birthday. Now keep in mind my age and that my wife and I are DINKs (Dual Income No Kids). We were to meet up with her younger sister and their young kids. There were millions of screaming kids and it was 95F and 95% humidity, and bazillions of flying insects. I was not having what I'd call a good time.

 

4 years later, I was told we were doing it again. Same trip, plus a Disney cruise... a few days of the park plus the cruise. I made up an excuse that I had work that I couldn't get away from work for the park portion and would show up before the cruise. In the months that preceded the trip, I found "adult Disney" http://www.stallion51.com/p51-flight-ops/p51-orientation-flights.shtml They are located just a handful of miles from the park at Kissimmee airport. I made the arrangements and set the plan in motion.

 

I also convinced my brother-in-law, who's also a pilot, to do this together.
