bilsteins vs fox 2.0??

You're comparing apples to oranges. They are not even in the same category or league, the Fox 2.0 is a complete coilover that is far superior to the 5100's. The cost alone should tell you that, they are almost 4x as much.

One fear I have with the Fox's is the lift ending up being 2.5 or 3" and me having problems with my UCA and stuff. I am trying to stay right around 2" and no higher.

I have them on my truck, ended up with about 2.25". They are coilovers so you can adjust them to whatever you want.

I did not realize this.

If I do mostly highway driving, am I going to be able to notice the ride difference between the bilsteins and foxs?

I wouldn't recommend spending the money on the Fox setup if you're only going to drive on the highway, but yes I'm sure you will notice a difference between the two.

You can't compare the two.

Or getting 1/2" like I did. They are "adjustable" but good luck. The cheapo rental spring compressors aren't enough and they have to be removed from the vehicle for adjustment.

Anybody else have any input on this investment? If the 5100s are going to ride like crap on the highway at the max setting, I would rather spend the extra money on the fox's. If I cannot tell much difference on the highway, it may not be worth it.

Like everyone has said, they are shocks in different leagues.

I have Bilsteins on my truck on the max setting and they fit my needs perfectly. Ride is probably the same as stock, but firmer and more controlled when cornering. When I went with bigger tires, that made the ride on my truck slightly worse but nothing to call home about. Essentially the same. I do mostly city/highway driving but do get out to the ranch and get off road from time to time and they handle all scenarios well. I am happy with the Bilsteins.

For me, Fox shocks were just unnecessary. They are definitely a superior product to the Bilstein's due to the fact that they are a true complete coilover with much higher off road capabilities but the money wasn't worth it to me for how I drive my truck and what I use my truck for.

So I guess it just depends on what you want to do and what is most important to you. Good luck!
