on the 2014 sierras, when our tires are rotated does something have to be reset in order for the display on the dashboard to be accurate as to the pressure in each tire? if so how do we reset it? Also, when installing new tires and wanting new valve stems, would we also have to change the tpms because they are attached to the valve stems? what do those run?

Yes, yes and yes.

When you rotate you will have to re-sync the TPMS in each tire with the new position on the truck, you can initiate it from the DIC but you have to use a TPMS trigger tool in order to complete the process. When you buy new wheels you can either swap the TPMS over from the old wheels and have them use a rebuild kit which just changes out the seals, or you can buy new TPMS sensors which will run you around $100-200 depending on the shop.

You can buy the tool for re-syncing the sensors, but check w/ your dealer or tire shop first. I just rotated my tires and my dealer re-syncs the sensors for free.

^^^Could be 2 different issues. What happens when you reset the MPG ? My 2011, both work fine - so far.
