What does your trailering sticker say?

Nevermind, just noticed you have a 2019

That brings up another point .... why is the front and rear axel weight combined not the same as GVWR?

I wouldn't say its impossible, but its extremely unlikely where you could hit both your gawrs.  The trucks just teeter back and forth.  If you put a snow plow on front, the rear gets light.  The front will be at fgawr but as you add weight to the rear, the front lightens where you are not at FGAWR.

Just for reference,

I've got a 2020 Silverado 2500 4wd crew standard bed LT and sticker shows curb weight at 7,110 lbs.

I would assume gas motor at that weight.

Yes, gas motor. Looks like about 1200lb difference between duramax and gasser.

I thought the Manufacturer's Certificate of Origin or vehicle title always listed the factory curb weight of the vehicle for registration/tax purposes.

You would be surprised depending on configuration. A CCLB 6L will weigh more than a DCLB 6.6L Duramax. My 07.5 Dmax double cab is about 600lbs lighter than my 2013 crew cab gasser.
