So I just bought a used 22 Silverado RST 6.2L with 10,000 miles after driving a 13 Silverado LT 5.3L for  230,000 miles. The 13 had afm lifter failure twice on #4 cylinder in 230,000 miles and I decided that was enough. I had done some research on the 6.2L and decided to give it a shot. I am considering an afm/dfm tuner and would like some input from folks that have tried them, whether good or bad news I'd like to hear from you. Also looking for a tuner to use on this 6.2L, if anyone could recommend one that will adjust shift points, throttle response and fuel tuning.

I don't have any experience with AFM removal.  Just wanted to let you know your truck doesn't have AFM.  It has the "new and improved" version called DFM.  The difference is instead of a V4/V8 mode it has 17 different modes for deactivating the cylinders that can go as low as only 2 or 3 cylinders running.

As for tuning the other items you mentioned, GM locked these trucks down really well.  I read an article awhile back where somebody at GM said you'd need several computers working together in the correct sequence to unlock the ECU.  As far a I'm aware the only method to tune the truck is to buy an unlocked ECU and have HPTuners program it.  Iirc, that'll cost you about $2,000.
