Changes from a 275/55/20 to a 275/60/20

If I were to upgrade to just a little bit bigger tire (1"), what will this do to my engine? I know my speedometer would be off by 1-2 mph according to some tire comparision charts, but would it cause any problems with my engine (shifting, etc.). If so would do you to fix the issue?

I haven't noticed any difference other than losing a little mpg because of the heavier tire.

Is it do-able without a level kit?

Yes, I had that size on my truck for a couple weeks before I added my lift. May get a slight rub on full lock, but very minor. Can fix by ziptieing fenderwell if it bothers you.

do you have to get your speedometer adjusted or does that really matter that much?

It doesn't matter that much. Like you said, 2 mph at higher speeds.
