I see there's some antifreeze on the wire loom at the front of the oil pan on my 2000 5.3L. I assume it's coming from the water pump gasket, what tool do you guys use to hold the water pump pulley to spin the fan clutch off?

Leave the belt in place

 

Put a wrench on it and pop the wrench with a dead blow hammer or similar. Something with a little weight. Often the quick blow will not it loose even if the pulley turns a little

 

I use an air chisel on the nut. Doesn't take much to break it free. You'll be driving it in the direction of taking it off. Plenty of Youtube videos out there showing several methods

It's called a fan clutch tool. Could either buy one or maybe rent one from a auto parts store.
