Another wheel fitment question

So before y'all start with the "have you tried search?", I have looked and looked but cannot find the exact info I need.  I also do not fully understand offsets/fitments - hence my asking the community and wanting an answer to my exact question/setup.

 

I have a 2014 Crew Cab 4WD with a 2.5" RC level kit.  I am looking to put 18x9 Fuel Couplers on my truck in either -12 or +1 offset, but am curious about fitment and look of each, and what tire size would be best.  I do not want to have any rubbing or cutting involved.  From what I've seen, a 285/60/18 is the way to go, but again, I do not understand offsets/fitments so I am looking for advice.  Anyone currently running a set up like this?  Is something like a 275/65/18 the better route?

 

Any and all advice is appreciate - pics are helpful as well to get an idea of how they'll turn out.

With a 2.5” level, 285/60/18 will be a little small. They are around 31.5” tall. The 275/65/18 is 32”. I have a 2” level on mine with 285/65/18 on 18x9 +12 wheels. The tread is flush with the top of the fender opening. With a -12 offset wheel, the tread would be nearly an inch outside the fender.

Yea, their site is off the hook. An after you pick your setup it'll ask you if you want to see that setup on other trucks.

I did, but figured I'd ask the forums to get first hand reviews/accounts from people with the same level kit and set up as I am looking at.  I'd rather learn from other peoples experiences to make sure I won't run into any issues or be unhappy with the end result.

 

The more I have read on it makes me lean towards 18x9  +1 offset with something like a 285/65/18 - I am also torn between Nitto Terra Grappler G2 and BFG K02 wheels. 

 

Discount Tire is running a rebate this weekend, so it's perfect time to pull the trigger since I'll get $300 on prepaid cards if I order through them - but it's only good until Sunday.
