When I open the door there is a sliding sound as if something is opening. When I turn off the engine there are numerous sounds as if the truck is shutting down. Has anyone experienced this? Is this normal?

No CEL, no other issues = normal.

Opening the door, isn't that the fuel pump priming? (that's what I always assumed)

Lot's of crazy clicks and things after I kill it. Relays? Underpants gnomes? (iykyk)

Opening any door primes the fuel pump. And when turning off the vehicle there's all sorts of modules that go to sleep at various times and make all sorts of noises. Totally normal.
