I have a 2003 Tahoe LT that I'm gonna put a 2in leveling kit on. What would be the biggest tire/rim combo I could do with no rubbing/trimming required?

You can try to check 4wheelonline for some wheel and tire packages for your Tahoe. Try to consider the following tire options:

 

Bridgestone Dueler H/L Alenza Plus

Goodyear Assurance CS Fuel Max

Yokohama Parada Spec X

Over the years I have had a lot of different combinations, but right now I think GM themselves have some of the most practical nice looking wheels out there.
