Depends on trim and on some trims it depends on 2wd/4wd.

MQB    Transmission, 10-speed automatic, electronically controlled with overdrive and tow/haul mode. Includes Cruise Grade Braking and Powertrain Grade Braking

Base sierra - not available
SLE and Elevation -  Included and only available with (L84) 5.3L EcoTec3 V8 engine on 4WD models or (LM2) Duramax 3.0L Turbo-Diesel I6 engine.
SLT and Denali -  Included and only available with (L84) 5.3L EcoTec3 V8 engine on 4WD models, (L87) 6.2L EcoTec3 V8 engine or (LM2) Duramax 3.0L Turbo-Diesel I6 engine.

AT4 - standard

Biggest change seems to be wireless CarPlay projection, which is nice and likely an updated dash

New dash isn't coming until 2022 at the earliest, and possibly 2023. It was pushed back due to the virus.

Biggest change appears to be no more SLT, LTZ or AT4 Double Cabs. I know there are some guys who aren't going to be happy about that.

Maybe I missed it, but did not see a replacement for this option:  (B59) Remote Start Package

Not familiar with it in the T1's, what all is included?

Remote start is standard on all trims except the base work truck.

Keyless open/start on LT and above

Was hoping for interior update with 10.2 inch screens in 2021.

Also, hope they add the Technology Package for the GMC Sierra SLT. Having the camera view all the way around a big truck greatly assists parking in smaller spaces.

Huh? My SLT already has the 360 camera.

Also great to see they are going to stop making Double Cab SLT's and AT4's. Means my loaded SLT Double Cab will be even more of a unicorn and worth even more the older it gets.

They aren't making them because they don't sell, why would it be worth more for something that sits in the dealer lots ?
